The pigpens gave us our basic meat: pork, ham, bacon, and sausage, all of which we prepared ourselves. Without refrigeration, beef was less common. About once every three or four weeks, we or a neighbor would butcher a calf and divide it with the community. In other ways, we had to meet our own needs. The swarming insects that gave our community its quaint name had no charm at all in the summer, when clouds of mosquitoes brought malaria.
